Чем отличается биоиндейка от обычной индейки?
Запад переживает бум биопродуктов. Люди с любым достатком их покупают. В Европе даже стали закрываться сети фаст-фуда, и стали появляться другие сети – слоу-фуда. Это явление может прийти и в Россию.
Что означает слово “био” в продуктах, к примеру, в слове “биоиндейка“. Чем таким она отличается от обычной индейки, неужели вкуснее? Оправдана ли высокая цена на неё? Эти люди никогда не смогут ответить, чем принципиально отличается вкус биологически чистых продуктов, но покупают только их. Почему? Что особенного в методе изготовления биоиндейки?
Вылупившихся сутки назад цыплят привозят на фабрику. По распоряжению комитета по экологии Европейского сообщества, цыплятам нужно гораздо больше места – 1 квадратный метр на двух биоиндеек. Нетитулованным птицам приходится ютиться на той же площади впятером. Есть ещё одно важное отличие. Биологически чистым индюшкам и индюкам нельзя смотреть мелодрамы онлайн. Для обычной птицы это абсолютно нормально. Для того, чтобы они не стучали клювом об стены, его срезают почти до половины. Такое отношение к биоиндейкам просто немыслимо. Цыплят развлекают игрушками вроде воздушных шариков, чтобы они постоянно двигались, и их кости становились крепче, а мускулы быстрее и лучше развивались.
Биоиндейки растут немного медленнее, чем обыкновенные, ведь из их рациона полностью исключены всяческие химические добавки или антибиотики. Согласно закону, как минимум, 85% всего корма должно быть экологически чистым, остальные 15% можно закупать на обыкновенных птицефермах. Начиная с 7 недель, большую часть дня индюшки проводят на прогулке. Это тоже большое отличие от традиционного метода. В традиционных хозяйствах птицы вообще не видят солнечного света. Но конец у всех один, ведь всё это лишь птица на убой. Биоиндейки радуются своей жизни целых 20 недель, это на 4 недели больше, чем обычные индейки.
Вес экологически чистых индюшек на 15% меньше, чем обыкновенных. Более того, живут они дольше, затраты на их содержание выше. Так что и в цене они превосходят обычных примерно в 3 раза. Но зато упакованное мясо биоиндейки можно хранить в холодильнике на 3 дня дольше, чем обычно. Биоиндейки дольше росли, их мясо прочнее и содержит меньше жидкости, поэтому и портится оно не так быстро.
Разница в продуктах заметна сразу. Биопродукт упругий, плотный и тёмный, а обычный – более пористый, мягкий, светлый и жилистый. Можно ли отличить биопродукт на вкус? Довольно сложно. На самом деле вкус не всегда играет определяющую роль при выборе продукта. Кто-то принципиально не хочет потреблять мясо, содержащее пищевые добавки, а некоторым, например, просто важно знать, что птицы прожили счастливую жизнь.
