Каждому хочется покупать такие продукты, особенно если они порционные, которые будут в течение длительного срока оставаться свежими и вкусными, сохраняя свой привлекательный внешний вид. Больше всего это касается мяса и колбасных изделий. Сначала мясо только что забитого животного очень чистое, практически стерильное, но во время разделки и последующей обработки, оно загрязняется различными микроорганизмами, в результате жизнедеятельности которых на самом продукте образуются вещества, которые меняют его свойства. Специалисты из химических лабораторий разработали и провели испытания новой антибактериальной плёнки с механизмом контролируемого высвобождения активного вещества – сорбиновой кислоты, которая соответствует всем необходимым требованиям действующих нормативов, а именно не имеет вкуса, запаха, она не ядовита и не вызывает аллергии.
Несколько кусков свежей свинины были заселены колониями бактерий. После этого одна часть образцов была завёрнута в обычную плёнку, а другая – в активную антимикробную. После недельного хранения при температуре +8°C стало очевидно различие в цвете мяса. По данным проведённой микробиологической экспертизы, количество бактерий на мясе в антибактериальной упаковке, сократилось приблизительно в 4 раза. Это означает, что новая технология успешно работает на сохранение свежести и обеспечение безопасности потребления мяса, рыбы, сыра и других продуктов питания.
